Description
Chewy Pumpkin Chocolate cookies are soft, moist, and loaded with melty chocolate chips—the ultimate fall dessert!
Ingredients
1 cup unsalted butter, softened
1 cup pumpkin purée (blotted dry)
2 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
1 cup brown sugar
1/2 cup granulated sugar
1 egg yolk
1 tsp vanilla extract
2 cups semi-sweet chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Cream butter and sugars until fluffy.
3. Add pumpkin, egg yolk, and vanilla, mix well.
4. In a separate bowl, whisk flour, baking soda, and cinnamon.
5. Combine wet and dry ingredients, fold in chocolate chips.
6. Scoop dough onto baking sheet.
7. Bake for 10–12 minutes until edges are set.
8. Cool for 5 minutes on the tray before moving to rack.
Notes
Blot pumpkin purée before using to prevent cakey cookies.
Store in airtight container for up to 5 days.
Freeze dough balls to bake later.
