- 9 lasagna noodles
- 2 cups marinara sauce
- 1 zucchini, sliced
- 1 bell pepper, diced
- 1 cup mushrooms, sliced
- 2 cups spinach
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions and drain.
- Heat olive oil in a pan and sauté the zucchini, bell pepper, and mushrooms until tender.
- Add the spinach and cook until wilted. Season with Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, half of the ricotta cheese, half of the sautéed vegetables, and a third of the mozzarella cheese.
- Repeat the layers one more time, ending with noodles and remaining marinara sauce.
- Sprinkle the top with the remaining mozzarella and Parmesan cheese.
- Bake for 30-35 minutes until bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
Notes
For extra flavor, you can add herbs like basil or oregano.
