Description

A delicious and hearty vegetable lasagna layered with rich marinara sauce and cheesy goodness.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 2 cups mushrooms, sliced
  • 2 cups marinara sauce
  • 3 cups mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a pan, sauté mushrooms until tender.
  4. Mix spinach, ricotta cheese, garlic powder, and Italian seasoning in a bowl.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 noodles over the sauce, add half of the ricotta mixture, half of the mushrooms, and a third of the mozzarella cheese.
  7. Add another layer of marinara sauce and repeat the process.
  8. Top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
  9. Bake for 45 minutes until bubbly and golden.
  10. Let it cool for 10 minutes before slicing.

Notes

For a richer flavor, add fresh herbs like basil or oregano.
