Description

A refreshing chicken Caesar pasta salad that combines classic Caesar flavors with hearty pasta, making it a perfect dish for gatherings and picnics.


Ingredients

  • 8 oz. uncooked pasta (rotini or penne)
  • 2 hearts of Romaine lettuce
  • 1 cup shredded rotisserie chicken
  • 2 teaspoons Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 3/4 cup mayonnaise
  • 1/3 cup grated Parmesan cheese
  • Optional: Croutons for topping

Instructions

  1. Cook the pasta according to package instructions until it’s al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Make the dressing by whisking together the Dijon mustard, fresh lemon juice, mayonnaise, and grated Parmesan cheese until smooth.
  3. Combine the cooled pasta with the dressing and toss until well-coated, then gently fold in the chopped Romaine and shredded chicken.
  4. Serve immediately or chill for about 30 minutes to enhance flavors.
