- 8 oz. uncooked pasta (rotini or penne)
- 2 hearts of Romaine lettuce
- 1 cup shredded rotisserie chicken
- 2 teaspoons Dijon mustard
- 2 tablespoons fresh lemon juice
- 3/4 cup mayonnaise
- 1/3 cup grated Parmesan cheese
- Optional: Croutons for topping
Instructions
- Cook the pasta according to package instructions until it’s al dente, about 8-10 minutes. Drain and rinse under cold water.
- Make the dressing by whisking together the Dijon mustard, fresh lemon juice, mayonnaise, and grated Parmesan cheese until smooth.
- Combine the cooled pasta with the dressing and toss until well-coated, then gently fold in the chopped Romaine and shredded chicken.
- Serve immediately or chill for about 30 minutes to enhance flavors.
Notes
Store leftover salad in an airtight container in the fridge for up to 3-4 days. For the best taste, eat it within a couple of days.
