Description

A quick and delicious Chicken Caprese Skillet with juicy chicken, fresh tomatoes, and pesto, perfect for busy weeknights.


Ingredients

  • 2 chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pesto sauce
  • 2 tablespoons balsamic glaze
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a drizzle of olive oil in a skillet over medium heat. Season your chicken breasts with salt and pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side or until cooked through.
  2. Remove the chicken from the skillet and set aside on a plate.
  3. Toss in the halved cherry tomatoes and sauté until softened, releasing their juices.
  4. Pour in the pesto and balsamic glaze, stirring to combine.
  5. Add the chicken back into the skillet and drizzle the tomato mixture over the top.
  6. Sprinkle the shredded mozzarella cheese over the chicken, cover the skillet, and cook for 2-3 minutes until the cheese is melted.
  7. Serve hot, garnishing with fresh basil if desired.

Notes

Serve with a side salad or over rice for a complete meal. Leftovers can be stored in the fridge for up to 3 days.
