- 2 chicken breasts
- 1 cup cherry tomatoes, halved
- 1/2 cup pesto sauce
- 2 tablespoons balsamic glaze
- 1 cup mozzarella cheese, shredded
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a drizzle of olive oil in a skillet over medium heat. Season your chicken breasts with salt and pepper. Add the chicken to the skillet and cook for about 6-7 minutes on each side or until cooked through.
- Remove the chicken from the skillet and set aside on a plate.
- Toss in the halved cherry tomatoes and sauté until softened, releasing their juices.
- Pour in the pesto and balsamic glaze, stirring to combine.
- Add the chicken back into the skillet and drizzle the tomato mixture over the top.
- Sprinkle the shredded mozzarella cheese over the chicken, cover the skillet, and cook for 2-3 minutes until the cheese is melted.
- Serve hot, garnishing with fresh basil if desired.
Notes
Serve with a side salad or over rice for a complete meal. Leftovers can be stored in the fridge for up to 3 days.
