Ingredients

- 6–8 thin sliced chicken breasts
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 1/2 cup buttermilk
- 1 egg
- 1 Tbs hot sauce
- Oil for frying
- 1/4 cup reserved oil from frying
- 1/3 cup flour (for gravy)
- 2 cups milk
- Salt & pepper (to taste)
Instructions
- Heat oil in a deep fryer or large pan to 325°F.
- In a bowl, whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder.
- In another bowl, whisk together buttermilk, egg, and hot sauce.
- Dredge chicken breasts in the flour mixture, dip in the egg mixture, then back in the flour mixture.
- Fry the chicken for 3-5 minutes on each side until golden brown and cooked through.
- For gravy, heat reserved oil in a pan, stir in flour and cook for 1 minute.
- Gradually add milk, whisking until thickened; season with salt and pepper.
- Serve with gravy over the fried chicken.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Best served hot with sides like mashed potatoes.
