- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots (thinly sliced)
- 2 green onions (chopped)
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Gather all your ingredients and prepare the vegetables by chopping them into bite-sized pieces.
- Cook the Lo Mein noodles according to the package instructions until al dente, then drain and set aside.
- Heat a large skillet or wok over medium-high heat and add a little oil to coat the bottom.
- Add the chicken to the hot skillet and sauté for about 6-8 minutes until golden brown and fully cooked. Remove the chicken and set aside.
- In the same pan, stir-fry the chopped bell peppers, sliced carrots, and green onions for about 3-4 minutes.
- Return the chicken to the skillet and add the cooked Lo Mein noodles.
- Pour the soy sauce, sesame oil, and minced garlic over the mixture and toss everything together until well mixed.
- Serve the Chicken Lo Mein hot, garnished with extra chopped green onions or sesame seeds if desired.
Notes
For extra flavor, consider serving with chili flakes or an Asian-style hot sauce on the side.
