Description

Ingredients

  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Gather all your ingredients and prepare the vegetables by chopping them into bite-sized pieces.
  2. Cook the Lo Mein noodles according to the package instructions until al dente, then drain and set aside.
  3. Heat a large skillet or wok over medium-high heat and add a little oil to coat the bottom.
  4. Add the chicken to the hot skillet and sauté for about 6-8 minutes until golden brown and fully cooked. Remove the chicken and set aside.
  5. In the same pan, stir-fry the chopped bell peppers, sliced carrots, and green onions for about 3-4 minutes.
  6. Return the chicken to the skillet and add the cooked Lo Mein noodles.
  7. Pour the soy sauce, sesame oil, and minced garlic over the mixture and toss everything together until well mixed.
  8. Serve the Chicken Lo Mein hot, garnished with extra chopped green onions or sesame seeds if desired.

Notes

For extra flavor, consider serving with chili flakes or an Asian-style hot sauce on the side.
