Description
Creamy Tuscan Chicken Pasta – tender chicken in a rich garlic parmesan sauce with spinach and sun-dried tomatoes.
Ingredients
2 chicken breasts, sliced thin
2 tbsp olive oil
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated parmesan
1/2 cup sun-dried tomatoes
2 cups baby spinach
8 oz penne or fettuccine pasta
Salt and pepper to taste
1 tsp Italian seasoning
Instructions
1. Cook pasta until al dente; reserve pasta water.
2. Season and sear chicken in olive oil until golden.
3. Remove chicken and sauté garlic and tomatoes.
4. Add cream, parmesan, and pasta water; stir until creamy.
5. Add spinach, then mix in pasta and chicken.
6. Simmer 2–3 minutes and serve warm.
Notes
You can substitute tofu or turkey for chicken.
Add red pepper flakes for a spicy kick.
