Description

A simple yet elegant Chicken Piccata recipe with bright flavors of lemon and capers, perfect for any occasion.


Ingredients

  • 1 lb chicken breast, sliced
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup butter
  • 1/2 cup chicken broth
  • 1/2 cup fresh lemon juice
  • 1/4 cup capers, rinsed
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Season the chicken breast slices with salt and pepper. Make sure to coat them well for flavor.
  2. Dredge each piece in flour, shaking off any excess.
  3. Heat the olive oil and butter in a large skillet over medium-high heat.
  4. Add the chicken to the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
  5. Remove the chicken from the skillet and set it aside on a plate.
  6. Add the chicken broth, lemon juice, and capers to the same skillet.
  7. Scrape the bottom of the pan with a wooden spoon to lift all that tasty brown bits (fond).
  8. Bring the sauce to a simmer and let it cook for about 5 minutes.
  9. Return the chicken to the skillet, spooning the sauce over the chicken pieces.
  10. Cook for an additional 5 minutes or until the chicken is thoroughly cooked, reaching an internal temperature of 165°F (75°C).
  11. Garnish with chopped parsley and serve immediately.

Notes

Serve with a light salad, roasted vegetables, or creamy mashed potatoes for a complete meal.
