- 1 lb chicken breast, sliced
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 1/4 cup butter
- 1/2 cup chicken broth
- 1/2 cup fresh lemon juice
- 1/4 cup capers, rinsed
- Fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Season the chicken breast slices with salt and pepper. Make sure to coat them well for flavor.
- Dredge each piece in flour, shaking off any excess.
- Heat the olive oil and butter in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook until golden brown on both sides, about 3-4 minutes per side.
- Remove the chicken from the skillet and set it aside on a plate.
- Add the chicken broth, lemon juice, and capers to the same skillet.
- Scrape the bottom of the pan with a wooden spoon to lift all that tasty brown bits (fond).
- Bring the sauce to a simmer and let it cook for about 5 minutes.
- Return the chicken to the skillet, spooning the sauce over the chicken pieces.
- Cook for an additional 5 minutes or until the chicken is thoroughly cooked, reaching an internal temperature of 165°F (75°C).
- Garnish with chopped parsley and serve immediately.

Serve with a light salad, roasted vegetables, or creamy mashed potatoes for a complete meal.
