Description

Ingredients

  • 1 lb chicken thighs or breasts
  • 2 tbsp olive oil
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp turmeric
  • Salt & pepper to taste
  • 2 cups cooked rice (cooled)
  • 1 cucumber, diced
  • 2 tomatoes, chopped
  • ½ red onion, sliced
  • Fresh parsley or cilantro
  • ¼ cup tahini
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • 2 tbsp olive oil
  • Water to thin dressing

Instructions

  1. Marinate the chicken: In a bowl, mix 2 tablespoons of olive oil, cumin, paprika, garlic powder, turmeric, salt, and pepper. Coat your chicken with this delicious spice blend and let it marinate for at least 30 minutes.
  2. Cook the chicken: Heat your grill or skillet over medium heat. Cook the marinated chicken until it’s fully cooked through (about 6-7 minutes per side), then let it rest for 5 minutes before slicing it into pieces.
  3. Crisp the rice: Heat a skillet with 1 tablespoon of oil. Add the cooled rice and cook until it turns golden and crunchy, stirring occasionally. Alternatively, preheat your air fryer to 400°F and crisp the rice for about 10 minutes.
  4. Prepare the vegetables: While the chicken cooks, chop the cucumber, tomatoes, red onion, and fresh herbs.
  5. Make the dressing: In a small bowl, whisk together tahini, lemon juice, minced garlic, olive oil, and a bit of water until creamy.
  6. Assemble the salad: Start with a base of crispy rice on your serving platter. Top it with the sliced chicken, fresh vegetables, and herbs. Drizzle your creamy tahini dressing over everything.

Notes

Marinate the chicken overnight for even better flavor. Use slightly undercooked rice for best results.
