- 2 Chicken breasts or thighs
- 8 Corn tortillas
- 1 Onion, diced
- 1/4 cup Cilantro, chopped
- 1 Lime, cut into wedges
- 2 tablespoons Olive oil
- 3 cloves Garlic, minced
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- Salt, to taste
- Pepper, to taste
Instructions
- Mix olive oil, minced garlic, cumin, chili powder, salt, and pepper to create a marinade.
- Add the chicken to the marinade and let it sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken for 6-7 minutes on each side or until fully cooked.
- Remove from the grill and let the chicken rest for a few minutes before slicing.
- Warm the corn tortillas on the grill for a few seconds on each side.
- Assemble the tacos by placing the grilled chicken in the tortilla and topping with diced onion, chopped cilantro, and a squeeze of lime.
