Ingredients

  • 2 Chicken breasts or thighs
  • 8 Corn tortillas
  • 1 Onion, diced
  • 1/4 cup Cilantro, chopped
  • 1 Lime, cut into wedges
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Mix olive oil, minced garlic, cumin, chili powder, salt, and pepper to create a marinade.
  2. Add the chicken to the marinade and let it sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the marinated chicken for 6-7 minutes on each side or until fully cooked.
  5. Remove from the grill and let the chicken rest for a few minutes before slicing.
  6. Warm the corn tortillas on the grill for a few seconds on each side.
  7. Assemble the tacos by placing the grilled chicken in the tortilla and topping with diced onion, chopped cilantro, and a squeeze of lime.
