2 cups fresh basil leaves, packed

1/2 cup walnuts, toasted

3 cloves garlic, peeled

1/2 cup grated Parmesan cheese

1/2 cup extra virgin olive oil

2 tablespoons fresh lemon juice

1/4 teaspoon salt

1/4 teaspoon black pepper

**For Assembly:**

4 ciabatta rolls or artisan sandwich bread, sliced

1 cup fresh arugula or mixed greens

1 large tomato, sliced

1/2 red onion, thinly sliced

4 slices provolone or mozzarella cheese (optional)

Instructions

`Remove chicken from refrigerator 15 minutes before cooking. Pat completely dry with paper towels and pound to even 3/4-inch thickness if needed.

Season both sides of chicken generously with garlic powder, Italian seasoning, salt, pepper, and paprika. Let rest 10 minutes.

For the pesto: Toast walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Let cool completely.

Notes

Store cooked chicken and pesto separately in airtight containers in refrigerator—chicken for 3-4 days, pesto for up to 5 days.
