Ingredients
3 tablespoons olive oil
1.5–2 pounds boneless, skinless chicken breasts
Salt & pepper
1 large yellow onion, diced
4 garlic cloves, minced
1.5 pounds zucchini, diced
3 tablespoons flour or cornstarch
1.5 cups chicken broth
1 cup heavy cream
¼ cup grated Parmesan cheese
2 teaspoons Italian herbs
1 teaspoon dried basil
½ teaspoon garlic powder
½ teaspoon red pepper flakes (optional)
1 cup panko breadcrumbs
3 tablespoons melted butter
¼ cup Parmesan cheese
1 teaspoon dried parsley
Cooking spray
Instructions
1. Preheat oven to 375°F (190°C).
2. Pat chicken dry, season and dice.
3. Brown chicken in hot skillet.
4. Sauté onion, add garlic.
5. Create roux with flour.
6. Add broth and cream.
7. Mix in Parmesan and herbs.
8. Combine chicken, zucchini, and sauce in baking dish.
9. Cover and bake 25-30 minutes.
10. Add breadcrumb topping.
11. Bake uncovered 10-12 minutes.
12. Rest 5 minutes before serving.
Notes
Replace cream with half Greek yogurt for lighter version.
Use rotisserie chicken for quicker prep.
Let rest before serving for best texture.
