Description

A hearty and flavorful vegetable lasagna, perfect for a comforting meal.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, fresh
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a skillet, and sauté garlic, zucchini, and bell pepper until tender.
  4. Add spinach, oregano, salt, and pepper; cook until spinach wilts.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Layer three noodles over the sauce, followed by ricotta, vegetable mix, and mozzarella.
  7. Add another layer of marinara and repeat until ingredients are used.
  8. Topping with remaining marinara and Parmesan cheese.
  9. Bake for 40 minutes until bubbly and golden.
  10. Let it cool for 10 minutes before slicing and serving.

Notes

For a richer taste, try adding more herbs or using a blend of cheeses.
