A delicious combination of sweet, smoky, and savory flavors, featuring marinated chicken thighs and creamy smoked Gouda mashed potatoes.


Ingredients

  • 4 Chicken thighs
  • 1/2 cup Chipotle honey sauce
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp Butter
  • 1 cup Smoked Gouda cheese, shredded
  • 4 Potatoes, peeled and chopped
  • 1/2 cup Milk
  • 2 cloves Garlic, minced

Instructions

  1. Marinate chicken thighs in chipotle honey sauce for at least 30 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. Place marinated chicken thighs on a baking sheet and season with salt and pepper.
  4. Bake for 25-30 minutes or until cooked through and caramelized.
  5. Meanwhile, peel and chop potatoes, then boil until tender.
  6. Drain the potatoes and mash with butter, smoked Gouda, milk, and minced garlic until creamy.
  7. Serve the baked chicken thighs over the smoked Gouda mashed potatoes.

Notes

For a spicier kick, add extra chipotle sauce or some red pepper flakes to the chicken marinade. You can also use Yukon Gold or Russet potatoes for the best mash.
