Ingredients

- 2 lbs Chicken thighs
- 1/2 cup Chipotle sauce
- 1/4 cup Honey
- 1 cup Smoked Gouda cheese, shredded
- 2 lbs Potatoes, peeled and chopped
- 1/4 cup Butter
- 1/2 cup Milk
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the chipotle sauce and honey together in a bowl. Toss the chicken thighs in the mixture until well-coated.
- Place the chicken thighs in a baking dish and bake for 25-30 minutes until cooked through.
- Meanwhile, peel and chop the potatoes. Boil them in salted water until tender.
- Drain the potatoes and mash them with butter and milk. Stir in the smoked Gouda until it melts and becomes creamy.
- Serve the chicken thighs with a generous side of smoked Gouda mashed potatoes.
Notes
For best results, marinate chicken for longer to enhance flavor. Serve with roasted vegetables for added color.
