- 4 Chicken thighs
- 1/2 cup Chipotle honey sauce
- 1 cup Smoked gouda cheese, shredded
- 2 large Potatoes, peeled and chopped
- 4 tbsp Butter
- 1/2 cup Milk
- Salt, to taste
- Pepper, to taste
Instructions
- Marinate chicken thighs in chipotle honey sauce for at least 30 minutes.
- Preheat oven to 400°F (200°C).
- Place marinated chicken thighs on a baking sheet and bake for 25-30 minutes.
- Peel and chop potatoes, then boil in salted water until tender, about 15-20 minutes.
- Drain potatoes, return to pot, and mash with butter, milk, smoked gouda, salt, and pepper.
- Serve chicken over smoked gouda mashed potatoes, drizzling any remaining sauce over the top.
Notes
For a milder sauce, reduce chipotle honey. Use fresh herbs for enhanced flavor. Adjust milk for creamier mashed potatoes.
