- 4 large eggs
- 100g granulated sugar
- 100g all-purpose flour
- 30g cocoa powder
- 1/4 teaspoon baking powder
- 200ml heavy cream
- 50g powdered sugar
- 200g dark chocolate
- 100ml heavy cream (for ganache)
- Butter (for greasing)
Instructions
- Preheat your oven to 180°C (350°F) and grease a baking sheet with butter. Then, line it with parchment paper for easy removal.
- In a mixing bowl, whisk together the eggs and granulated sugar until the mixture becomes pale and fluffy.
- Sift the flour, cocoa powder, and baking powder into another bowl. Gradually fold this dry mixture into the egg mixture.
- Once combined, pour the batter onto the prepared baking sheet and spread it evenly.
- Bake your cake for about 12-15 minutes. To check if it’s done, insert a toothpick into the center; it should come out clean.
- When done, allow the cake to cool slightly. Then, invert it onto a piece of lightly sugar-dusted parchment paper and gently roll it up.
- For the filling, beat the heavy cream with powdered sugar until stiff peaks form. Unroll your cake and spread the filling evenly over the surface before rolling it back up.
- Now for the ganache! Heat 100ml of heavy cream until just boiling, pour it over chopped dark chocolate, and stir until smooth.
- Pour the ganache over the rolled cake and smooth it out with a spatula.
- Chill your Chocolate Log Cake in the fridge for at least 30 minutes before serving.
Notes
Serve with whipped cream and fresh berries. Store leftovers in the refrigerator for up to 3 days.
