Instructions

1. Remove cream cheese from refrigerator and let soften at room temperature for 30-45 minutes. Cut into cubes.

2. Line 2-3 baking sheets with parchment paper or wax paper. Set aside.

3. Crush Oreo cookies into fine crumbs using a food processor (15-20 pulses), blender, or by placing in a sealed plastic bag and crushing with a rolling pin. You should have about 3 cups of crumbs.

4. In a large mixing bowl, combine Oreo crumbs, softened cream cheese cubes, and vanilla extract (if using). Mix with a sturdy spoon or your hands until thoroughly combined with no cream cheese streaks visible. Mixture should be moldable like play dough.

5. Using a small cookie scoop (1 tablespoon size), scoop mixture and roll between your palms to form smooth, round balls. Apply gentle pressure while rolling.

6. Place rolled balls on prepared baking sheet, spacing about 1 inch apart. You should get approximately 48 balls.

7. Refrigerate balls for 30-60 minutes until firm. This step is crucial for successful dipping.

8. Melt chocolate in microwave-safe bowl in 30-second intervals, stirring between each, until smooth. Or use double boiler method. If using chocolate chips, add vegetable oil and stir until smooth.

9. Remove 6-8 chilled balls from refrigerator at a time, keeping rest cold. Insert a toothpick into each ball.

10. Dip ball completely into melted chocolate, using a spoon to cover the top. Gently tap toothpick on bowl edge to remove excess chocolate.

11. Use another toothpick to slide the ball off onto prepared parchment paper. Immediately add sprinkles or decorations before chocolate sets (30-60 seconds).

12. Continue dipping and decorating in small batches until all balls are coated.

13. Let coated balls sit at room temperature for 15-20 minutes until chocolate hardens completely.

14. Once chocolate is set, transfer to airtight container with parchment between layers. Store in refrigerator for up to 2 weeks or freeze for up to 3 months.

15. Bring to room temperature 15-20 minutes before serving for best texture and flavor.

Notes

Cream cheese MUST be fully softened to room temperature (30-45 minutes) for smooth mixing. Cold cream cheese creates lumpy balls.

Don’t skip the chilling step before dipping – balls need to be firm or they’ll fall apart in the chocolate.

Work quickly when decorating – chocolate sets in 30-60 seconds. Have all decorations ready before you start dipping.

For drizzling: Let first chocolate coat set completely (15-20 minutes), then use a fork to drizzle contrasting chocolate in zigzag pattern.

Double Stuf Oreos: Reduce cream cheese to 6 ounces since there’s more filling in the cookies.

Chocolate too thick? Add 1 teaspoon vegetable oil at a time until it reaches coating consistency.
