Ingredients

  • 1 lb chicken breast
  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 teaspoon cilantro, chopped
  • 1 cup rice
  • 1 medium peach, diced
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • Olive oil
  • Lime wedges for serving

Instructions

  1. Cook the rice according to package instructions.
  2. Mix honey, lime juice, chopped cilantro, salt, and pepper in a bowl.
  3. Marinate the chicken breast in the honey-lime mixture for at least 15 minutes.
  4. Heat olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side until fully cooked.
  5. Remove from heat and let it rest before slicing.
  6. Combine diced peach, red onion, and cilantro in another bowl to make the salsa.
  7. Assemble the bowls with rice, sliced chicken, and peach salsa.
  8. Serve with lime wedges.

Notes

Feel free to add avocado or sour cream for a creamy contrast. Leftovers can be stored in an airtight container for up to 3 days.
