Ingredients

- 1 lb chicken breast
- 2 tablespoons honey
- 2 tablespoons lime juice
- 1 teaspoon cilantro, chopped
- 1 cup rice
- 1 medium peach, diced
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- Olive oil
- Lime wedges for serving
Instructions
- Cook the rice according to package instructions.
- Mix honey, lime juice, chopped cilantro, salt, and pepper in a bowl.
- Marinate the chicken breast in the honey-lime mixture for at least 15 minutes.
- Heat olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side until fully cooked.
- Remove from heat and let it rest before slicing.
- Combine diced peach, red onion, and cilantro in another bowl to make the salsa.
- Assemble the bowls with rice, sliced chicken, and peach salsa.
- Serve with lime wedges.
Notes
Feel free to add avocado or sour cream for a creamy contrast. Leftovers can be stored in an airtight container for up to 3 days.
