- 1 cup Milk (any non-dairy milk works well)

- 2 tablespoons Melted Butter
- 1/4 cup Brown Sugar
- 1 tablespoon Ground Cinnamon
- 4 ounces Cream Cheese
- 1 cup Powdered Sugar
- 1 teaspoon Vanilla Extract
- 2 tablespoons Melted Butter
Instructions
- Make the Batter: In a mixing bowl, combine the flour, baking powder, and salt. In another bowl, whisk together the milk, egg, vegetable oil, and melted butter. Once mixed, gradually add the wet ingredients to the dry ingredients. Stir gently until just combined; it’s okay if some lumps remain.
- Prepare the Cinnamon Swirl: In a small bowl, mix together the brown sugar and ground cinnamon.
- Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it. Pour about 1/4 cup of batter for each pancake onto the skillet. Once bubbles form on the surface (about 2-3 minutes), sprinkle a little of the cinnamon-sugar mixture on top. Flip the pancake and cook for another 1-2 minutes until golden brown.
- Make the Cream Cheese Glaze: In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy.
- Serve Immediately: Stack pancakes high, drizzle the cream cheese glaze on top, and enjoy!
Notes
For added flavor, sprinkle some additional cinnamon on top and serve with fresh fruit or nuts.
