- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups water
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 pre-baked pie crust
Instructions
- Whisk together the sugar, cornstarch, and salt in a medium saucepan until well combined.
- Gradually stir in the water and cook over medium heat, stirring until the mixture thickens and begins to boil.
- Beat the egg yolks in a separate bowl until smooth.
- Slowly whisk some of the hot mixture into the egg yolks to temper them, then return everything back to the saucepan.
- Cook the mixture an additional two minutes while stirring constantly until smooth.
- Remove from heat and stir in the butter, fresh lemon juice, and lemon zest.
- Pour the filling into the pre-baked pie crust and let it cool at room temperature or refrigerate for a firmer texture.
Notes
Garnish with whipped cream, lemon slices, or fresh berries for added flair. Store in the refrigerator for up to 5 days.
