Description

A zesty classic lemon pie that combines a sweet-tart filling with a buttery crust, perfect for any gathering.


Ingredients

  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 pre-baked pie crust

Instructions

  1. Whisk together the sugar, cornstarch, and salt in a medium saucepan until well combined.
  2. Gradually stir in the water and cook over medium heat, stirring until the mixture thickens and begins to boil.
  3. Beat the egg yolks in a separate bowl until smooth.
  4. Slowly whisk some of the hot mixture into the egg yolks to temper them, then return everything back to the saucepan.
  5. Cook the mixture an additional two minutes while stirring constantly until smooth.
  6. Remove from heat and stir in the butter, fresh lemon juice, and lemon zest.
  7. Pour the filling into the pre-baked pie crust and let it cool at room temperature or refrigerate for a firmer texture.

Notes

Garnish with whipped cream, lemon slices, or fresh berries for added flair. Store in the refrigerator for up to 5 days.
