- 1/4 cup shredded unsweetened coconut (optional)
Instructions
- Preheat your oven: Set your oven to 375°F (190°C).
- Prepare your muffin tin: Line a 12-cup muffin tin with paper liners or grease it well.
- Whisk dry ingredients: In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- Mix wet ingredients: In a separate medium bowl, whisk together the brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract.
- Combine wet and dry: Pour the wet ingredients into the dry ingredients and gently mix with a spatula until just combined.
- Fold in extras: Carefully fold in the grated carrots, chopped apple, raisins, chopped nuts, and shredded coconut.
- Fill the muffin cups: Divide the batter evenly among the 12 prepared muffin cups.
- Bake: Place the muffin tin in the preheated oven and bake for 18 to 22 minutes.
- Cool: Let the muffins cool in the pan for about 5 minutes before transferring them to a wire rack.
