- 1 pound chicken breast, diced
- 1 cup jasmine rice
- 1 can coconut milk
- 1 cup chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Chopped green onions for garnish
Instructions
- Heat the olive oil in a large pan over medium heat until shimmering.
- Add the diced chicken into the pan, season with garlic powder, ginger, salt, and pepper. Cook until golden brown, about 5-7 minutes.
- Stir in the jasmine rice, then add the coconut milk, chicken broth, and soy sauce. Combine everything well.
- Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 15-20 minutes.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, serve, and garnish with chopped green onions.
Notes
For variations, you can use chickpeas or diced tofu for a vegetarian version. Feel free to add vegetables like bell peppers or snap peas.
