Description

A warm and comforting bowl of tender chicken cooked in creamy coconut milk, combined with fragrant jasmine rice.


Ingredients

  • 1 pound chicken breast, diced
  • 1 cup jasmine rice
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped green onions for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat until shimmering.
  2. Add the diced chicken into the pan, season with garlic powder, ginger, salt, and pepper. Cook until golden brown, about 5-7 minutes.
  3. Stir in the jasmine rice, then add the coconut milk, chicken broth, and soy sauce. Combine everything well.
  4. Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 15-20 minutes.
  5. Remove from heat and let it sit covered for 5 minutes.
  6. Fluff the rice with a fork, serve, and garnish with chopped green onions.

Notes

For variations, you can use chickpeas or diced tofu for a vegetarian version. Feel free to add vegetables like bell peppers or snap peas.
