Description

Coconut Chocolate Energy Balls are a healthy, no-bake snack packed with energy and flavor, ready in 15 minutes.


Ingredients

Scale

1 cup Medjool dates, pitted

1/2 cup almonds or cashews

1/4 cup cocoa powder

1/4 cup shredded coconut, plus extra for rolling

1/3 cup almond or peanut butter

Pinch of salt

Optional: chia seeds, flax seeds, or protein powder


Instructions

1. Soak dates for 10 minutes if dry.

2. Add dates, nuts, cocoa powder, nut butter, salt, and optional mix-ins to a food processor.

3. Blend until sticky and well combined.

4. Scoop and roll mixture into balls, then coat with shredded coconut.

5. Store in an airtight container at room temperature for 3-4 days, refrigerate up to 2 weeks, or freeze up to 3 months.

Notes

Optional: Add vanilla extract or cinnamon for extra flavor.
