Description

A quick, creamy, and flavorful Cajun chicken Alfredo dish made with orzo in just one pot, perfect for busy weeknights.


Ingredients

  • 1 lb boneless skinless chicken breasts (diced)
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1 tbsp olive oil (for sautéing)
  • 1 cup diced onions (fresh is best)
  • 2 cloves garlic (minced)
  • 1 cup bell pepper (diced, optional)
  • 1.5 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese (grated)
  • Salt (to taste)
  • Pepper (to taste)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Warm 1 tablespoon of olive oil in a large pot over medium heat until it shimmers. Then add the diced chicken.
  2. Season the chicken with 1 tablespoon of Cajun seasoning, salt, and pepper. Cook this chicken for about 5-7 minutes, or until it turns golden brown and is fully cooked.
  3. Remove the chicken from the pot and set it aside.
  4. Add 1 cup of diced onions and 2 minced garlic cloves to the same pot. Cook until fragrant for about 2-3 minutes. If using, stir in 1 cup of diced bell pepper and cook for another minute.
  5. Bring together 1.5 cups of orzo pasta, 4 cups of chicken broth, and 1 cup of heavy cream. Bring this mixture to a gentle boil.
  6. Reduce the heat to low, cover, and let it simmer for 10-12 minutes. Stir occasionally until the orzo becomes tender.
  7. Stir in the cooked chicken and add 1 cup of grated Parmesan cheese. Mix everything until creamy.
  8. Ladle the warm orzo mixture into bowls and garnish with fresh parsley if desired.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat with a splash of broth or cream to restore creaminess.
