A creamy and flavorful one-pot Cajun chicken Alfredo orzo dish that comes together in just 30 minutes, perfect for busy weeknights.

- 1 lb boneless skinless chicken breasts (diced)
- 1 tbsp Cajun seasoning (adjust to taste)
- 1 tbsp olive oil (for sautéing)
- 1 cup diced onions (fresh is best)
- 2 cloves garlic (minced)
- 1 cup bell pepper (diced) (optional)
- 1.5 cups orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup Parmesan cheese (grated)
- Salt (to taste)
- Pepper (to taste)
- Fresh parsley (for garnish) (optional)
Instructions
- Warm 1 tablespoon of olive oil in a large pot over medium heat until it shimmers.
- Add your diced chicken, seasoning it with 1 tablespoon of Cajun seasoning, salt, and pepper.
- Cook until golden brown and cooked through, which takes about 5-7 minutes.
- Remove the browned chicken and set it aside.
- Add 1 cup of diced onions and 2 minced garlic cloves into the same pot.
- Cook them until fragrant, about 2-3 minutes.
- If using bell pepper, stir in 1 cup of diced bell pepper now.
- Mix in 1.5 cups of orzo pasta, 4 cups of chicken broth, and 1 cup of heavy cream.
- Bring this mixture to a gentle boil.
- Once boiling, reduce heat to low, cover the pot, and let it simmer for about 10-12 minutes.
- Stir in your cooked chicken and 1 cup of grated Parmesan cheese until everything is creamy and well combined.
- Taste and adjust the seasoning as necessary.
- Ladle the warm orzo mixture into bowls and garnish with fresh parsley if you like!
Notes
Don’t skip the browning step to add flavor. Taste as you go to adjust Cajun seasoning to your preference.
