1 cup brown sugar (light or dark)

For Each Iced Latte:

23 shots espresso (23 oz) or ½ cup strong coffee, slightly cooled

23 tablespoons cinnamon dolce syrup (adjust to taste)

1 cup cold milk (whole, 2%, or alternative)

Ice cubes

Whipped cream for topping (optional)

Ground cinnamon for dusting

Extra cinnamon dolce syrup for drizzling


Instructions

1. Make the cinnamon dolce syrup: In a small saucepan, combine water, brown sugar, and ground cinnamon. Bring to a boil over medium-high heat, stirring constantly to dissolve sugar completely.

2. Reduce heat to medium-low and simmer for 5 minutes, stirring occasionally. The mixture will thicken slightly and cinnamon will infuse deeply.

3. Remove from heat and stir in vanilla extract and a pinch of salt. Let cool completely, then transfer to a glass jar. Store in refrigerator for up to 3 weeks.

4. Brew 2-3 espresso shots (about 2-3 ounces) or ½ cup strong coffee. Let cool for 5-10 minutes so it’s warm but not scalding hot.

5. In a tall glass (16-20 oz), add 2-3 tablespoons of cinnamon dolce syrup.

6. Pour the slightly cooled espresso over the syrup and stir vigorously for 10-15 seconds until well combined.

7. Fill the glass about ⅔ full with ice cubes.

8. Slowly pour cold milk over the ice, filling nearly to the top. Leave about ½ inch space for whipped cream.

9. Top with whipped cream (optional but recommended).

10. Drizzle extra cinnamon dolce syrup over the whipped cream in a crosshatch pattern. Dust generously with ground cinnamon.

Notes

Use coffee ice cubes instead of regular ice to prevent dilution as they melt.
