- 4 cups of water
- 1 corned beef brisket (3–4 lbs)
- 1 onion, quartered
- 2–3 carrots, cut into chunks
- 6–8 small potatoes, halved
- 1 small head of cabbage, cut into wedges
- Salt and pepper to taste
- Optional: mustard for serving
Instructions
- Bring the water to a boil in a large pot.
- Add the corned beef brisket and the quartered onion.
- Reduce the heat to a simmer, cover the pot, and let it cook for about 150-180 minutes until the meat is tender.
- Add the carrots and potatoes to the pot and cook for another 15 minutes.
- Then, toss in the cabbage wedges and cook for an additional 10-15 minutes.
- Remove the meat and veggies from the pot, slice up the corned beef, and arrange it with the vegetables on a serving platter.
Notes
Serve with mustard for added flavor, and pair with warm crusty bread or a light salad.
