Description

A classic comfort food dish featuring tender corned beef simmered with hearty vegetables like cabbage, carrots, and potatoes.


Ingredients

  • 4 cups of water
  • 1 corned beef brisket (34 lbs)
  • 1 onion, quartered
  • 23 carrots, cut into chunks
  • 68 small potatoes, halved
  • 1 small head of cabbage, cut into wedges
  • Salt and pepper to taste
  • Optional: mustard for serving

Instructions

  1. Bring the water to a boil in a large pot.
  2. Add the corned beef brisket and the quartered onion.
  3. Reduce the heat to a simmer, cover the pot, and let it cook for about 150-180 minutes until the meat is tender.
  4. Add the carrots and potatoes to the pot and cook for another 15 minutes.
  5. Then, toss in the cabbage wedges and cook for an additional 10-15 minutes.
  6. Remove the meat and veggies from the pot, slice up the corned beef, and arrange it with the vegetables on a serving platter.

Notes

Serve with mustard for added flavor, and pair with warm crusty bread or a light salad.
