Description

A hearty and comforting classic dish made with tender corned beef, fresh vegetables, and flavorful broth.


Ingredients

  • 3 to 4 pounds corned beef brisket
  • 1 small head of cabbage, cut into wedges
  • 4 large carrots, cut into large pieces
  • 4 medium potatoes, quartered
  • 1 onion, quartered
  • 23 cloves of garlic, minced
  • 2 bay leaves
  • 1 tablespoon black peppercorns
  • Water or beef broth

Instructions

  1. Rinse the corned beef under cold water and place it in a large pot or slow cooker.
  2. Add enough water or beef broth to cover the beef.
  3. Toss in the bay leaves, black peppercorns, garlic, and onions.
  4. Bring the pot to a boil, then reduce the heat and let it simmer for about 150 to 180 minutes, or until the meat is tender.
  5. Add the carrots, potatoes, and cabbage 30 minutes before serving.
  6. Cook everything together until the vegetables are tender.
  7. Finally, slice the corned beef against the grain and serve it proudly with the vegetables.

Notes

Serve with crusty bread or Irish soda bread. Consider adding a dab of Dijon mustard or horseradish on the side.
