Ingredients

- 3 to 4 pounds corned beef brisket
- 1 small head of cabbage, cut into wedges
- 4 large carrots, cut into large pieces
- 4 medium potatoes, quartered
- 1 onion, quartered
- 2–3 cloves of garlic, minced
- 2 bay leaves
- 1 tablespoon black peppercorns
- Water or beef broth
Instructions
- Rinse the corned beef under cold water and place it in a large pot or slow cooker.
- Add enough water or beef broth to cover the beef.
- Toss in the bay leaves, black peppercorns, garlic, and onions.
- Bring the pot to a boil, then reduce the heat and let it simmer for about 150 to 180 minutes, or until the meat is tender.
- Add the carrots, potatoes, and cabbage 30 minutes before serving.
- Cook everything together until the vegetables are tender.
- Finally, slice the corned beef against the grain and serve it proudly with the vegetables.
Notes
Serve with crusty bread or Irish soda bread. Consider adding a dab of Dijon mustard or horseradish on the side.
