- 1 cup cottage cheese
- 1 cup all-purpose flour
- 1/2 cup milk
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar (optional)
- Butter or oil for cooking
Instructions
- In a mixing bowl, combine the cottage cheese, flour, milk, eggs, baking powder, salt, and sugar (if using). Mix until just combined. Don’t overmix; a few lumps are okay!
- Heat a non-stick skillet or griddle over medium heat. Add a little butter or oil to coat the surface.
- Pour 1/4 cup of batter for each pancake onto the skillet. You can cook more than one at a time depending on the size of your skillet.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.
- Serve warm with your favorite toppings such as syrup, fruit, or yogurt.
Notes
For best results, don’t overmix the batter and ensure your skillet is preheated. Experiment with different toppings and variations.
