Description

Fluffy cottage cheese pancakes that are delicious and easy to make, perfect for breakfast or brunch.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/4 cup milk
  • 1 tablespoon butter

Instructions

  1. Place a medium-sized mixing bowl on the countertop.
  2. Crack two large eggs into the bowl.
  3. Use a whisk or a fork to beat the eggs until they are fully combined and slightly frothy.
  4. Add one cup of cottage cheese to the bowl with the beaten eggs.
  5. Stir the cottage cheese and eggs together until they are well combined.
  6. In a separate bowl, measure out half a cup of flour.
  7. Add a quarter teaspoon of salt to the flour.
  8. Add one tablespoon of sugar to the flour and salt mixture.
  9. Add half a teaspoon of baking powder to the dry ingredients and stir to combine them evenly.
  10. Slowly add the dry ingredients to the wet ingredients with the cottage cheese and eggs.
  11. Mix everything together gently with a spoon or spatula until all the dry ingredients are fully incorporated.
  12. Pour a quarter cup of milk into the batter and stir it in until the batter reaches a smooth, slightly thick consistency.
  13. Place a frying pan or griddle on the stove over medium heat and let it warm up for a couple of minutes.
  14. Add one tablespoon of butter to the pan, allowing it to melt completely and coat the bottom evenly.
  15. Spoon some of the batter onto the pan, using about two to three tablespoons per pancake.
  16. Cook the pancakes for about two to three minutes, or until small bubbles begin to form on the surface.
  17. Carefully flip each pancake using a spatula and cook the other side for another two to three minutes until it is golden brown and cooked through.
  18. Once the pancakes are cooked, transfer them to a plate and continue cooking the rest of the batter, adding more butter to the pan as needed.
  19. Serve the pancakes immediately, optionally topped with syrup, fruit, or your favorite toppings.

Notes

For a classic touch, drizzle warm maple syrup on top. You can also sprinkle powdered sugar or add fresh fruit.
