- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup flour
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 1/2 teaspoon baking powder
- 1/4 cup milk
- 1 tablespoon butter
Instructions
- Place a medium-sized mixing bowl on the countertop.
- Crack two large eggs into the bowl.
- Use a whisk or a fork to beat the eggs until they are fully combined and slightly frothy.
- Add one cup of cottage cheese to the bowl with the beaten eggs.
- Stir the cottage cheese and eggs together until they are well combined.
- In a separate bowl, measure out half a cup of flour.
- Add a quarter teaspoon of salt to the flour.
- Add one tablespoon of sugar to the flour and salt mixture.
- Add half a teaspoon of baking powder to the dry ingredients and stir to combine them evenly.
- Slowly add the dry ingredients to the wet ingredients with the cottage cheese and eggs.
- Mix everything together gently with a spoon or spatula until all the dry ingredients are fully incorporated.
- Pour a quarter cup of milk into the batter and stir it in until the batter reaches a smooth, slightly thick consistency.
- Place a frying pan or griddle on the stove over medium heat and let it warm up for a couple of minutes.
- Add one tablespoon of butter to the pan, allowing it to melt completely and coat the bottom evenly.
- Spoon some of the batter onto the pan, using about two to three tablespoons per pancake.
- Cook the pancakes for about two to three minutes, or until small bubbles begin to form on the surface.
- Carefully flip each pancake using a spatula and cook the other side for another two to three minutes until it is golden brown and cooked through.
- Once the pancakes are cooked, transfer them to a plate and continue cooking the rest of the batter, adding more butter to the pan as needed.
- Serve the pancakes immediately, optionally topped with syrup, fruit, or your favorite toppings.
Notes
For a classic touch, drizzle warm maple syrup on top. You can also sprinkle powdered sugar or add fresh fruit.
