- 2 Eggs
- 1 cup Oat Flour
- 2 tbsp Granulated Sweetener
- 1 tsp Vanilla Extract
- 1 tbsp Baking Powder
- 1/4 tsp Salt
- 1/2 cup Blueberries or Chocolate Chips
- 1/4 cup Nuts (chopped)
- As needed Cooking Spray or Butter
Instructions
- Mix the wet ingredients: In a mixing bowl, combine the cottage cheese and eggs. Whisk the mixture until it is well blended and creamy.
- Add the dry ingredients: Sprinkle in the oat flour, sweetener, baking powder, salt, and vanilla extract. Stir everything together just until combined.
- Fold in your choice of blueberries, chocolate chips, or chopped nuts.
- Heat the skillet: Preheat a non-stick skillet or griddle over medium heat. Coat it lightly with cooking spray or butter.
- Pour about a quarter cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes until bubbles form and edges look set.
- Flip and cook for another 1-2 minutes until golden brown and firm.
- Serve: Once cooked, stack pancakes on a plate and serve hot.
Notes
