Ingredients

  • 2 Eggs
  • 1 cup Oat Flour
  • 2 tbsp Granulated Sweetener
  • 1 tsp Vanilla Extract
  • 1 tbsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 cup Blueberries or Chocolate Chips
  • 1/4 cup Nuts (chopped)
  • As needed Cooking Spray or Butter

Instructions

  1. Mix the wet ingredients: In a mixing bowl, combine the cottage cheese and eggs. Whisk the mixture until it is well blended and creamy.
  2. Add the dry ingredients: Sprinkle in the oat flour, sweetener, baking powder, salt, and vanilla extract. Stir everything together just until combined.
  3. Fold in your choice of blueberries, chocolate chips, or chopped nuts.
  4. Heat the skillet: Preheat a non-stick skillet or griddle over medium heat. Coat it lightly with cooking spray or butter.
  5. Pour about a quarter cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes until bubbles form and edges look set.
  6. Flip and cook for another 1-2 minutes until golden brown and firm.
  7. Serve: Once cooked, stack pancakes on a plate and serve hot.
