- 1 tablespoon (15 ml) vanilla extract
- ¼ cup (60 ml) canola oil for frying
- 2 tablespoons (30 g) sugar
- 1 tablespoon (15 g) baking powder
Instructions
- Start by whisking the cottage cheese in a large mixing bowl until it becomes smooth and creamy.
- Crack the four eggs directly into the bowl with the cottage cheese and mix thoroughly.
- Pour in the vanilla extract, stirring it through the mixture.
- Sprinkle the sugar over the liquid ingredients and gently fold it in.
- Sift the baking powder into the wet ingredients and stir it in slowly.
- Gradually fold in the flour, mixing until just combined.
- Heat a non-stick skillet over medium heat and lightly coat with canola oil.
- Using a ladle, pour the batter onto the skillet, forming circular pancakes.
- Cook until bubbles form on the surface and edges look dry, about 2-3 minutes.
- Carefully flip the pancakes and cook until golden brown.
- Transfer the pancakes to a warm plate and serve with maple syrup or jam.
