Ingredients

  • 4 eggs
  • 1 cup (120 g) flour
  • 1 tablespoon (15 ml) vanilla extract
  • ¼ cup (60 ml) canola oil for frying
  • 2 tablespoons (30 g) sugar
  • 1 tablespoon (15 g) baking powder

Instructions

  1. Start by whisking the cottage cheese in a large mixing bowl until it becomes smooth and creamy.
  2. Crack the four eggs directly into the bowl with the cottage cheese and mix thoroughly.
  3. Pour in the vanilla extract, stirring it through the mixture.
  4. Sprinkle the sugar over the liquid ingredients and gently fold it in.
  5. Sift the baking powder into the wet ingredients and stir it in slowly.
  6. Gradually fold in the flour, mixing until just combined.
  7. Heat a non-stick skillet over medium heat and lightly coat with canola oil.
  8. Using a ladle, pour the batter onto the skillet, forming circular pancakes.
  9. Cook until bubbles form on the surface and edges look dry, about 2-3 minutes.
  10. Carefully flip the pancakes and cook until golden brown.
  11. Transfer the pancakes to a warm plate and serve with maple syrup or jam.
