- 2 slices of sourdough bread
- 1 cup of cottage cheese
- 2 medium ripe tomatoes, sliced
- A handful of fresh basil leaves, torn or whole
- 2 tablespoons of olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Start by toasting the sourdough bread slices until they turn golden brown and crispy.
- While the bread toasts, scoop the cottage cheese into a bowl and season with salt and black pepper.
- Wash the tomatoes thoroughly and slice them into medium-thick rounds.
- Once the bread is toasted, spread a generous layer of cottage cheese on each slice.
- Arrange the sliced tomatoes on top of the cottage cheese.
- Scatter fresh basil leaves over the tomatoes.
- Drizzle olive oil over everything and season with additional salt and black pepper.
- If desired, cut the toast in half to serve.
- Enjoy immediately while warm and crispy!
