Ingredients

  • 2 slices of sourdough bread
  • 1 cup of cottage cheese
  • 2 medium ripe tomatoes, sliced
  • A handful of fresh basil leaves, torn or whole
  • 2 tablespoons of olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Start by toasting the sourdough bread slices until they turn golden brown and crispy.
  2. While the bread toasts, scoop the cottage cheese into a bowl and season with salt and black pepper.
  3. Wash the tomatoes thoroughly and slice them into medium-thick rounds.
  4. Once the bread is toasted, spread a generous layer of cottage cheese on each slice.
  5. Arrange the sliced tomatoes on top of the cottage cheese.
  6. Scatter fresh basil leaves over the tomatoes.
  7. Drizzle olive oil over everything and season with additional salt and black pepper.
  8. If desired, cut the toast in half to serve.
  9. Enjoy immediately while warm and crispy!
