Ingredients
2 cups clams (fresh or canned)
2 large potatoes, diced
1 onion, chopped
2 carrots, diced
2 celery stalks, sliced
3 cups vegetable or seafood stock
1 cup cream or coconut milk
2 tbsp olive oil
2 garlic cloves, minced
Salt & pepper to taste
1 bay leaf
1 tsp thyme
Instructions
1. Rinse clams thoroughly.
2. Heat olive oil in a pot, sauté onion, garlic, and celery.
3. Add potatoes, carrots, and stock. Simmer until potatoes are tender.
4. Add clams and cream. Cook gently until clams are fully opened.
5. Season with salt, pepper, and herbs.
6. Let rest 5 minutes before serving.
Notes
For a lighter version, use coconut milk instead of cream.
Add cayenne pepper for a spicy twist.
Serve with crusty bread for dipping.
