Description

This Cranberry Orange Bread features tart fresh cranberries, bright citrus zest, and a sweet orange glaze. Moist, tender, and perfect for holiday baking or gift-giving.


Ingredients

2 cups fresh cranberries, chopped

2 cups all-purpose flour

1 cup granulated sugar

1½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

¾ cup buttermilk, room temperature

⅓ cup vegetable oil

2 large eggs, room temperature

Zest of 2 oranges

¼ cup fresh orange juice

1 teaspoon vanilla extract

GLAZE:

1 cup powdered sugar

23 tablespoons fresh orange juice

1 teaspoon orange zest

Pinch of salt


Instructions

1. Preheat oven to 350°F. Grease and flour a 9×5-inch loaf pan, then line with parchment paper.

2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

3. In a separate bowl, combine buttermilk, oil, eggs, orange zest, orange juice, and vanilla extract.

4. Create a well in dry ingredients and pour in wet mixture. Fold gently until just combined.

5. Fold in chopped cranberries until evenly distributed throughout batter.

6. Pour batter into prepared pan and smooth the top.

7. Bake for 55-65 minutes until toothpick inserted in center comes out clean.

8. Cool in pan for 15 minutes, then transfer to wire rack.

9. While bread cools, whisk together powdered sugar, orange juice, zest, and salt for glaze.

10. Once bread is completely cool, drizzle glaze over top and let set for 10 minutes before slicing.

Notes

Use frozen cranberries if fresh aren’t available – do not thaw before adding.

Don’t overmix the batter or bread will be tough.

Store wrapped tightly at room temperature for 3 days or freeze for 3 months.

For muffins, bake at 375°F for 18-22 minutes.

Measure flour by spooning into cup and leveling off for best results.
