Description

Indulge in delicious cheesecake bars that combine all the signature flavors of classic cannoli, complete with a crunchy graham cracker crust and mini chocolate chips.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup ricotta cheese
  • 1/2 cup mini chocolate chips
  • 1/4 cup chopped pistachios (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish to prevent sticking.
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until the crumbs are well coated and press the mixture firmly into the bottom of the prepared baking dish.
  3. Beat the cream cheese, powdered sugar, and vanilla in a separate bowl until smooth.
  4. Add in the ricotta cheese and mix until everything comes together beautifully.
  5. Fold in the mini chocolate chips and chopped pistachios, if you’re including them.
  6. Spread the cheesecake mixture evenly over the crust you just created, smoothing it out with a spatula.
  7. Bake in the preheated oven for 25 to 30 minutes, or until the center is set.
  8. Allow the bars to cool completely before transferring to the fridge to chill for at least two hours.
  9. Dust the top with powdered sugar before serving and cut into bars.

Notes

For cleaner cuts, let the bars chill in the fridge for a few hours or even overnight.
