- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup ricotta cheese
- 1/2 cup mini chocolate chips
- 1/4 cup chopped pistachios (optional)
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish to prevent sticking.
- Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until the crumbs are well coated and press the mixture firmly into the bottom of the prepared baking dish.
- Beat the cream cheese, powdered sugar, and vanilla in a separate bowl until smooth.
- Add in the ricotta cheese and mix until everything comes together beautifully.
- Fold in the mini chocolate chips and chopped pistachios, if you’re including them.
- Spread the cheesecake mixture evenly over the crust you just created, smoothing it out with a spatula.
- Bake in the preheated oven for 25 to 30 minutes, or until the center is set.
- Allow the bars to cool completely before transferring to the fridge to chill for at least two hours.
- Dust the top with powdered sugar before serving and cut into bars.
Notes
For cleaner cuts, let the bars chill in the fridge for a few hours or even overnight.
