  • 1 lb Boneless, Skinless Chicken Breasts, cut into 1-inch cubes
  • 1 teaspoon Salt (divided)
  • 1/2 teaspoon Black Pepper (divided)
  • 4 cloves Garlic, minced
  • 2 tablespoons All-Purpose Flour
  • 2 tablespoons Unsalted Butter
  • 2 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 lb Potato Gnocchi
  • 3 cups Broccoli Florets
  • 1/2 cup Grated Parmesan Cheese
  • 1/4 teaspoon Dried Thyme (optional)
  • Pinch of Red Pepper Flakes (optional)
  • Fresh Parsley, chopped (for garnish)

Instructions

  1. Pat the chicken breast cubes completely dry with a paper towel; season with half of the salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat; add the chicken in a single layer and cook until golden brown.
  3. Remove the chicken from the skillet and set aside.
  4. Add unsalted butter to the skillet; once melted, sauté minced garlic until fragrant.
  5. Sprinkle flour over the mixture; whisk constantly to create a roux, then slowly pour in the chicken broth while whisking.
  6. Simmer the sauce for 3-5 minutes until it thickens slightly; stir in heavy cream and seasonings.
  7. Add potato gnocchi and broccoli directly to the skillet; cover and cook until gnocchi are tender.
  8. Stir in grated Parmesan cheese until melted; return the cooked chicken and combine.
  9. Taste the sauce and adjust seasoning if necessary; serve hot garnished with fresh parsley.
