Description

A delightful and easy-to-make pasta salad combining grilled chicken, romaine lettuce, and Caesar dressing, perfect for picnics or potlucks.


Ingredients

  • 8 oz Pasta (rotini, penne, or fusilli)
  • 2 cups Grilled Chicken (tender grilled or pan-seared)
  • 4 cups Romaine Lettuce (freshly chopped)
  • 1 cup Caesar Dressing (store-bought or homemade)
  • 1 cup Croutons (store-bought or homemade)
  • 1/2 cup Parmesan Cheese (or dairy-free alternative)
  • to taste Salt & Pepper

Instructions

  1. Boil a large pot of salted water. Add the pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. If using raw chicken, grill or pan-sear until cooked through (internal temp of 165°F). Chop or shred into bite-sized pieces.
  3. Chop the romaine lettuce into medium-sized pieces.
  4. In a large mixing bowl, combine cooled pasta, chicken, and romaine. Pour in Caesar dressing and mix until well coated.
  5. Gently fold in croutons and sprinkle Parmesan cheese. Season with salt and pepper.
  6. Serve immediately or chill for 10-15 minutes to meld flavors.

Notes

For best results, add croutons right before serving to maintain their crunchiness. Experiment with additional ingredients like cherry tomatoes or avocado for variation.
