Ingredients

  • 2 chicken breasts, cooked and shredded
  • 4 cups chicken broth
  • 2 cups ramen noodles
  • 1 cup mixed vegetables (like broccoli, carrots, and bell peppers)
  • 1/2 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  2. Pour in the chicken broth and bring it to a simmer.
  3. Add the mixed vegetables and cook until they are tender, which usually takes around 5 minutes.
  4. Stir in the shredded chicken and soy sauce, heating everything through for another minute or two.
  5. In a separate pot, cook the ramen noodles according to the package instructions. Once done, drain the noodles and set them aside.
  6. After the broth and vegetables are heated, lower the heat and slowly stir in the heavy cream.
  7. Season your broth with salt and pepper to taste, mixing well.
  8. Finally, add the cooked ramen noodles to the pot and stir to combine everything.
  9. Serve hot, garnished with chopped green onions for an added burst of flavor.
