Description

A quick and delicious creamy garlic chicken dish that combines tender chicken, crispy potatoes, and a rich garlic cream sauce, ready in just 40 minutes.


Ingredients

  • lbs boneless skinless chicken breasts, cut into chunks
  • lbs baby Yukon gold potatoes, halved
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • ¾ cup chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp Dijon mustard (optional)
  • 1 tbsp fresh chopped parsley

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the halved potatoes cut-side down, and season them with salt and pepper. Cook for 8–10 minutes until they turn golden and crispy. Flip the potatoes and cook for another 5 minutes until fork-tender. Once done, remove them from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and butter. Add the chicken pieces in a single layer, making sure not to overcrowd the pan. Season with paprika, Italian seasoning, salt, and pepper. Cook for 4–5 minutes per side until they’re golden brown and fully cooked through. Remove the chicken as needed to avoid overcrowding.
  4. Lower the heat to medium and add the minced garlic to the skillet. Sauté for about 30 seconds until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits at the bottom of the skillet to incorporate all that delicious flavor.
  6. Stir in the heavy cream, Parmesan cheese, and Dijon mustard, if using. Let it simmer for about 3–5 minutes until the sauce has slightly thickened.
  7. Add the chicken and potatoes back into the skillet. Spoon the creamy sauce over everything and let it simmer for another 2–3 minutes until everything is beautifully coated.
  8. Sprinkle fresh chopped parsley over the top and serve immediately.

Notes

Pair with a simple side salad or garlic bread for a delightful meal. Store leftovers in the refrigerator for up to 3 days, or freeze for up to 2 months.
