Ingredients

  • 4 Chicken thighs
  • 1 cup Cream
  • 1 tbsp Herbs (e.g., thyme, rosemary, parsley)
  • Salt to taste
  • Pepper to taste
  • 4 Potatoes
  • 2 tbsp Butter
  • 1/2 cup Milk
  • 3 Carrots
  • 2 tbsp Honey
  • 1 tbsp Olive oil

Instructions

  1. Start by seasoning the chicken thighs with salt, pepper, and your choice of herbs.
  2. Pour olive oil into a large pan and heat it up. Add the seasoned chicken thighs and cook until golden brown, about 7-10 minutes on each side.
  3. Once cooked, remove the chicken from the pan and let it rest. Add cream to the pan, simmering until it thickens slightly.
  4. Peel and chop potatoes, then boil in salted water until tender, about 15-20 minutes.
  5. Drain the potatoes and mash them with butter and milk until smooth. Season with salt if needed.
  6. Slice the carrots and cook them in another pan with a splash of water until tender, about 5-7 minutes. Stir in honey and cook until glazed.
  7. Plate the creamy herb chicken with mashed potatoes and honey glazed carrots. Drizzle extra sauce over the chicken.

Notes

For a lighter version, use Greek yogurt or sour cream instead of heavy cream. You can switch up the herbs based on preference.
