- 4 Chicken thighs
- 1 cup Cream
- 1 tbsp Herbs (e.g., thyme, rosemary, parsley)
- Salt to taste
- Pepper to taste
- 4 Potatoes
- 2 tbsp Butter
- 1/2 cup Milk
- 3 Carrots
- 2 tbsp Honey
- 1 tbsp Olive oil
Instructions
- Start by seasoning the chicken thighs with salt, pepper, and your choice of herbs.
- Pour olive oil into a large pan and heat it up. Add the seasoned chicken thighs and cook until golden brown, about 7-10 minutes on each side.
- Once cooked, remove the chicken from the pan and let it rest. Add cream to the pan, simmering until it thickens slightly.
- Peel and chop potatoes, then boil in salted water until tender, about 15-20 minutes.
- Drain the potatoes and mash them with butter and milk until smooth. Season with salt if needed.
- Slice the carrots and cook them in another pan with a splash of water until tender, about 5-7 minutes. Stir in honey and cook until glazed.
- Plate the creamy herb chicken with mashed potatoes and honey glazed carrots. Drizzle extra sauce over the chicken.
Notes
For a lighter version, use Greek yogurt or sour cream instead of heavy cream. You can switch up the herbs based on preference.
