- 1.5 lb chicken breast (cubed)
- 8 oz button mushrooms (sliced)
- 1 cup heavy cream
- 2 cups cheddar cheese (shredded)
- 4 garlic (minced)
- 1 medium onion (chopped)
- 2 tbsp olive oil
- 1 tsp dried thyme
- salt (to taste)

Instructions
- Warm your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, stirring until they become fragrant and golden, about 3-5 minutes.
- Toss in the cubed chicken breast, seasoning with salt and pepper. Cook until the chicken is no longer pink, about 7-10 minutes.
- Stir in the sliced mushrooms, allowing them to soften for about 5 minutes.
- Lower the heat and pour in the heavy cream, stirring to combine. Add shredded cheddar cheese and let it melt.
- Sprinkle in dried thyme and adjust the seasoning with more salt and pepper to your liking.
- Gently pour the mixture into a greased baking dish, spreading it evenly.
- Place the dish in your preheated oven and bake for 25-30 minutes, until bubbly and golden brown.
- Remove from the oven and let it rest for 5 minutes before serving.
Notes
Pairs well with steamed vegetables or a fresh salad. For extra flavor, add cooked bacon or different types of cheese.
