Ingredients

  • 1.5 lb chicken breast (cubed)
  • 8 oz button mushrooms (sliced)
  • 1 cup heavy cream
  • 2 cups cheddar cheese (shredded)
  • 4 garlic (minced)
  • 1 medium onion (chopped)
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • salt (to taste)
  • pepper (to taste)

Instructions

  1. Warm your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, stirring until they become fragrant and golden, about 3-5 minutes.
  3. Toss in the cubed chicken breast, seasoning with salt and pepper. Cook until the chicken is no longer pink, about 7-10 minutes.
  4. Stir in the sliced mushrooms, allowing them to soften for about 5 minutes.
  5. Lower the heat and pour in the heavy cream, stirring to combine. Add shredded cheddar cheese and let it melt.
  6. Sprinkle in dried thyme and adjust the seasoning with more salt and pepper to your liking.
  7. Gently pour the mixture into a greased baking dish, spreading it evenly.
  8. Place the dish in your preheated oven and bake for 25-30 minutes, until bubbly and golden brown.
  9. Remove from the oven and let it rest for 5 minutes before serving.
