Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 1 lb. pasta (bucatini, fettuccine, spaghetti)
  • 1 cup heavy cream
  • 3/4 cup chicken broth
  • 1/3 cup finely chopped fresh parsley
  • 6 garlic cloves, minced
  • 1 Tbsp. lemon juice
  • 2 tsp. lemon zest
  • 1 Tbsp. butter
  • 1 1/2 cups finely chopped yellow onion
  • 1 1/2 tsp. smoked paprika
  • 2 tsp. dried oregano
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 3/4 tsp. kosher salt
  • 1/2 tsp. black pepper

Instructions

  1. Boil salted water in a large pot and cook your pasta until just under al dente.
  2. Heat olive oil in a skillet over medium heat. Season the chicken breasts and cook until golden brown and cooked through.
  3. Set the chicken aside on a plate.
  4. Add butter and onions to the same skillet, sauté until translucent.
  5. Pour in heavy cream and chicken broth, and let it simmer for about 3-5 minutes.
  6. Add lemon juice and zest into the sauce.
  7. Combine your cooked pasta with the sauce, tossing until well coated. Slice the chicken and place it on top.
  8. Garnish with fresh parsley before serving.

Notes

For a vegetarian option, replace chicken with sautéed mushrooms or vegetables. This dish can also work with shrimp.
