- 1 lb. boneless, skinless chicken breasts
- 1 lb. pasta (bucatini, fettuccine, spaghetti)
- 1 cup heavy cream
- 3/4 cup chicken broth
- 1/3 cup finely chopped fresh parsley
- 6 garlic cloves, minced
- 1 Tbsp. lemon juice
- 2 tsp. lemon zest
- 1 Tbsp. butter
- 1 1/2 cups finely chopped yellow onion
- 1 1/2 tsp. smoked paprika
- 2 tsp. dried oregano
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 3/4 tsp. kosher salt
- 1/2 tsp. black pepper
Instructions
- Boil salted water in a large pot and cook your pasta until just under al dente.
- Heat olive oil in a skillet over medium heat. Season the chicken breasts and cook until golden brown and cooked through.
- Set the chicken aside on a plate.
- Add butter and onions to the same skillet, sauté until translucent.
- Pour in heavy cream and chicken broth, and let it simmer for about 3-5 minutes.
- Add lemon juice and zest into the sauce.
- Combine your cooked pasta with the sauce, tossing until well coated. Slice the chicken and place it on top.
- Garnish with fresh parsley before serving.
Notes
For a vegetarian option, replace chicken with sautéed mushrooms or vegetables. This dish can also work with shrimp.
