Description

A hearty and healthy creamy chicken casserole featuring tender chicken, broccoli, and mushrooms topped with melted cheese.


Ingredients

  • 2 lbs boneless, skinless chicken breast
  • 3 cups broccoli florets (fresh or frozen)
  • 8 oz sliced cremini or white mushrooms
  • 8 oz full-fat cream cheese, room temperature
  • ½ cup sour cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup chicken broth
  • 2 tbsp olive oil or butter
  • Salt, pepper, and Italian seasoning to taste
  • Optional: red pepper flakes for warmth

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease your casserole dish.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, and half the Italian seasoning. Cook for about 5-6 minutes on each side until golden and cooked through. Remove from skillet and let rest for 5 minutes, then shred or dice.
  3. Add the remaining tablespoon of olive oil to the same skillet. Sauté diced onion and minced garlic for about 3 minutes until softened. Add mushrooms and cook for about 5 minutes until browned. Stir in broccoli and cook for 2 minutes.
  4. Lower the heat to medium and add cream cheese and sour cream, stirring until smooth. Slowly pour in chicken broth while whisking. Return shredded chicken to the skillet and mix everything together. Adjust seasoning as needed.
  5. Pour the mixture into the prepared casserole dish and sprinkle mozzarella and Parmesan cheese evenly on top.
  6. Bake for 20 to 25 minutes or until the cheese is bubbly and golden brown. Broil for the last 2 minutes if desired.
  7. Let the casserole sit for 5-10 minutes before serving.

Notes

Serve garnished with parsley and pair with a fresh salad or roasted vegetables. Can store in the fridge for up to 4 days or freeze for up to 3 months.
