- 6 chicken breasts (boneless & skinless)
- 2 tsp olive oil
- 1 tsp dried oregano
- ½ tsp paprika
- 1 tsp salt
- ½ tsp pepper
- 2 tsp olive oil (for the sauce)
- 4 garlic cloves (crushed/minced)
- 1 cup heavy/whipping cream
- 2 tsp lemon juice
- ¼ cup Parmesan cheese (grated)
- Salt and pepper (to taste)
- Parsley (for serving)
Instructions
- Start by placing the chicken breasts between two sheets of parchment paper or plastic wrap. Flatten them to about 1 cm (or half an inch) thick using a rolling pin or a meat mallet.
- Drizzle half of the olive oil over the chicken. Season both sides with oregano, paprika, salt, and pepper. Rub the spices into the chicken to ensure even flavor.
- Heat a large pan over high heat. Add the chicken to the pan and cook for about 2-3 minutes on each side until golden brown. Once cooked, remove the chicken from the pan and set it aside.
- Add the remaining olive oil and minced garlic to the same pan. Sauté the garlic for about 30 seconds until fragrant.
- Pour in the heavy cream and lemon juice. Bring this mixture to a simmer, then stir in the grated Parmesan cheese. Season to taste with salt and pepper.
- Return the chicken to the pan, reduce the heat, and let it cook for another 5-7 minutes, or until the chicken is fully cooked and the sauce has thickened slightly.
- Give it a final taste to adjust the seasoning, garnish with chopped parsley, and serve!
Notes
Serve over rice or pasta to soak up the sauce. Pairs well with roasted vegetables or a light side salad.
