Description

A comforting dish featuring succulent chicken in a creamy Parmesan lemon sauce, perfect for weeknight dinners.


Ingredients

  • 6 chicken breasts (boneless & skinless)
  • 2 tsp olive oil
  • 1 tsp dried oregano
  • ½ tsp paprika
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tsp olive oil (for the sauce)
  • 4 garlic cloves (crushed/minced)
  • 1 cup heavy/whipping cream
  • 2 tsp lemon juice
  • ¼ cup Parmesan cheese (grated)
  • Salt and pepper (to taste)
  • Parsley (for serving)

Instructions

  1. Start by placing the chicken breasts between two sheets of parchment paper or plastic wrap. Flatten them to about 1 cm (or half an inch) thick using a rolling pin or a meat mallet.
  2. Drizzle half of the olive oil over the chicken. Season both sides with oregano, paprika, salt, and pepper. Rub the spices into the chicken to ensure even flavor.
  3. Heat a large pan over high heat. Add the chicken to the pan and cook for about 2-3 minutes on each side until golden brown. Once cooked, remove the chicken from the pan and set it aside.
  4. Add the remaining olive oil and minced garlic to the same pan. Sauté the garlic for about 30 seconds until fragrant.
  5. Pour in the heavy cream and lemon juice. Bring this mixture to a simmer, then stir in the grated Parmesan cheese. Season to taste with salt and pepper.
  6. Return the chicken to the pan, reduce the heat, and let it cook for another 5-7 minutes, or until the chicken is fully cooked and the sauce has thickened slightly.
  7. Give it a final taste to adjust the seasoning, garnish with chopped parsley, and serve!

Notes

Serve over rice or pasta to soak up the sauce. Pairs well with roasted vegetables or a light side salad.
