- 4 boneless, skinless chicken breasts
- 1 cup heavy cream
- 3 tablespoons peri-peri sauce
- 2 cups cooked white rice
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup chicken stock
- 1 teaspoon lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat and add the seasoned chicken breasts. Sear them on both sides until golden brown, about 5-7 minutes.
- Remove the chicken and add the chopped onion and minced garlic to the same skillet. Sauté until soft and fragrant, about 2-3 minutes.
- Add the chicken stock, scraping up any brown bits. Stir in heavy cream, peri-peri sauce, and lemon juice. Simmer until the sauce thickens, about 5 minutes.
- Return the chicken to the skillet and simmer in the sauce until fully cooked through, about 5-7 minutes.
- Serve the chicken over cooked white rice, garnished with freshly chopped parsley.
