  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 3 tablespoons peri-peri sauce
  • 2 cups cooked white rice
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup chicken stock
  • 1 teaspoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat and add the seasoned chicken breasts. Sear them on both sides until golden brown, about 5-7 minutes.
  3. Remove the chicken and add the chopped onion and minced garlic to the same skillet. Sauté until soft and fragrant, about 2-3 minutes.
  4. Add the chicken stock, scraping up any brown bits. Stir in heavy cream, peri-peri sauce, and lemon juice. Simmer until the sauce thickens, about 5 minutes.
  5. Return the chicken to the skillet and simmer in the sauce until fully cooked through, about 5-7 minutes.
  6. Serve the chicken over cooked white rice, garnished with freshly chopped parsley.
