Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Start by seasoning the chicken breasts with the garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Place the chicken in the skillet and sear each side for about 4-5 minutes until golden-brown.
  4. Remove the chicken from the skillet and set it aside.
  5. In a medium saucepan, bring 2 cups of chicken broth and 1/2 teaspoon salt to a boil.
  6. Stir in the rice, reduce heat, cover, and let simmer for 15-18 minutes.
  7. Fluff the rice with a fork and set aside.
  8. Melt the butter in the same skillet over medium heat.
  9. Whisk in the flour and let it cook for 1-2 minutes.
  10. Pour in the whole milk and 1/2 cup chicken broth, whisking constantly.
  11. Mix in the garlic powder, thyme, cheddar cheese, and Parmesan cheese, cooking for 3-4 minutes until thickened.
  12. Return the chicken to the skillet and spoon the sauce over the top.
  13. Cover and simmer on low heat for 10 minutes.
  14. Plate the rice and top with the chicken and sauce, garnishing with parsley.

Notes

Serve with a fresh green salad or steamed vegetables for a complete meal. Store leftovers in airtight containers for up to 3 days in the fridge.
