- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 teaspoon salt
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1/2 cup chicken broth
- 1/2 teaspoon garlic powder
- 1/4 teaspoon thyme
- 1/2 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Start by seasoning the chicken breasts with the garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Place the chicken in the skillet and sear each side for about 4-5 minutes until golden-brown.
- Remove the chicken from the skillet and set it aside.
- In a medium saucepan, bring 2 cups of chicken broth and 1/2 teaspoon salt to a boil.
- Stir in the rice, reduce heat, cover, and let simmer for 15-18 minutes.
- Fluff the rice with a fork and set aside.
- Melt the butter in the same skillet over medium heat.
- Whisk in the flour and let it cook for 1-2 minutes.
- Pour in the whole milk and 1/2 cup chicken broth, whisking constantly.
- Mix in the garlic powder, thyme, cheddar cheese, and Parmesan cheese, cooking for 3-4 minutes until thickened.
- Return the chicken to the skillet and spoon the sauce over the top.
- Cover and simmer on low heat for 10 minutes.
- Plate the rice and top with the chicken and sauce, garnishing with parsley.
Notes
Serve with a fresh green salad or steamed vegetables for a complete meal. Store leftovers in airtight containers for up to 3 days in the fridge.
