Description

Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, fresh
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles as per package instructions. Drain and set aside.
  3. Heat olive oil in a pan over medium heat. Add onion, garlic, zucchini, and bell pepper. Sauté until softened.
  4. Mix in the spinach and Italian seasoning. Cook until spinach wilts. Season with salt and pepper.
  5. Spread a thin layer of marinara sauce at the bottom of a baking dish.
  6. Layer with three lasagna noodles, followed by half of the vegetable mixture, a layer of ricotta cheese, a layer of marinara sauce, and one-third of the mozzarella cheese.
  7. Repeat the layers: noodles, vegetables, ricotta, sauce, mozzarella.
  8. Top with remaining noodles, sauce, and remaining mozzarella and Parmesan cheese.
  9. Bake in the preheated oven for 30-35 minutes, or until bubbly and golden.
  10. Let the lasagna cool for 10 minutes before slicing and serving.
